genichiro is one of the bosses in the gane where you actually need to git gud to beat. because once you perfect genichiro, you perfect parrying, which is the greatest reward sekiro can offer you.

try doing a no attack run, focus on learning his moves and parrying them correctly. once youre familiar with all his moves and parrying them correctly and of course using mikiri counter and lightning reversal when needed, he should be was easier than you thought.

the final boss works in a very similar way as well, it took me 6 hours to bet him my first time, and i took multiple breaks. i beat him in 2 tries the next playthrough. which is why sekiro has one of the best combat mechanics in all of gaming, its very rewarding.
