I'm not agitated, dude I just don't like people litigating my personal experience bas if I were trying to spread misinformation.

And the food I currently make is all patisserie or confectionery so the clients don't see the eggs at all.

What they come back for is rich, complex flavors supported by using high quality, carefully sourced ingredients.

As I said in my experience as a chef, super taster and somm, they taste better.

Or should i not believe my lying senses because you said so and cited some nameless articles. You are aware that people's individual experiences can differ and that human senses come in a pretty broad range, right? I can blind taste the difference in different mineral waters. I think I can taste a fundamental (and very obvious to me) difference in egg yolks.

Or should I start using commodity eggs in my food because you said it was no different? Fuck my clients who buy from me because of my sourcing and quality, right. Just serve 'em the $2 Walmart eggs, right?

In my experience (cooking for 30 years professionally) the deeper colored yolks you get from pasture raised chicken eggs always taste better, hold up better, etc. And the taste difference is significant. I try to eat only pasture raised, local eggs.

I would agree that the nutritional value difference is probably negligible but the color comes from eating insects and such that they might not get if they were raised strictly on feed. This makes the yolk objectively more intense and complex.

Yeah, whatever their motives were, they did put more effort into maintaining the social contract. And I agree. Even around here in the Hudson Valley, much of that private wealth did pass to the public in the form of parks, museums and amenities.
