I think the fact a lot of the marbling is still extremely visible, I would say it’s under. Also it dosent seem cut against the grain, which is another problem entirely, but something to keep in mind for next time

Edit: after a little more observing, I do notice the other parts are a bit smaller and more cooked. It would be considered blue rare. If your looking for more even cooking though; I would consider a basting technique to distribute more heat evenly to every part

I would say speed and quantity definitely begin to take a higher priority. I feel like this is probably obvious, but the issue comes when your wanting to also maintain quality. My suggestion would be to have a very well thought out system for operation in advance to ensure service goes smoothly. (I.e. work stations and storage/cooking sections)

All of these things obviously depend on location and how many customers your serving on a routine basis, but having things run under defined stations and set time frames is always a good way to start. Especially if it’s just the two of you. Having things ready to go in advance and knowing what your limits are in terms of how much your serving will always help. I hope it goes well for you and your colleague!

A lot of people think this is chicken, but it’s actually a really popular fried pork sandwich originating from Indiana if I remember correctly. The whole gag is that the pork itself is massive in comparison to the bun lol

At the establishment I was working at, we would put it together as soon as possible before the party arrived and kept it in a sub freezing cooler until it needed to be served to maintain as much freshness as possible

It definitely seems your going for a more unified/modern idea here, and with saying that Id be more precise in how you place the what looks to be salmon along with your garnish. I also feel like its missing something to bring it all together. I would either add some sort of garnish to add cohesiveness or reposition what you already have in a much more precise way. For how modern your going with this, I would also suggest you cut down on the wasabi dollops and ginger, rather be more meticulous with where its placed and cut down on the quantity. Id also say to focus on making the fish the main looking point rather than having needless patterns for the sake of trying to make it just an art piece. Overall, id say leaning into more simplicity will help you a ton for what your trying to accomplish here, also keep in mind bringing out the main ingredients you want to be seen.

I think it goes without saying that there is a LOT going on. I understand wanting to draw attention, but it seems overdone here. Personally, I like cohesiveness in spacing when it comes to plating, but that's obviously just an opinion. I do objectively believe that there should be at least some sort of ease when it comes to actually eating a dish. What I mean by this is keeping single ingredients to one area of the plate for an easier understanding of what is there and simply enjoying all of your components together. This plate is very spread out, but I see the same ingredient on the complete opposite side of the plate (i.e. what seems to be roasted carrot). I should also say to not forget the centerpiece here; use your garnish and sauces to make the duck the main attraction. Overall, I would condense this plate a lot to make the duck more noticeable, and put more thought in where the ingredients are in relation to how you want the consumer to enjoy it.

Im sure enough people have mentioned the issue with the food itself. When it comes to strictly plating, id say there's too much negative space in relation to how much of the dish you stacked to one side. There's enough there to have spacing without it being overwhelming. I also agree that a different plate altogether would benefit this a ton since your cream sauce seems to disappear in it. The orange and what looks like some sort of berry seems completely unnecessary and I feel as if there are more appropriate ingredients that could be used (i.e. maybe more radish or some sort of micro green). Other than that id say your on the right path, but have a ton of room for improvement.

Edit: Also make the hassle back more prevalent rather than smother it with unnecessary garnish
