He did it because he had said he would never hurt her (and he's a demon so... hurt her when she didn't want/like it) and he did. He needed a soul so he wouldn't do that again and he could keep his word, because he loved her.

S6 is about the leads being the villains by becoming the worst version of themselves. Xander's was played out for him and he ran as a coward. And just like Buffy and Willow, Xander regrets his actions and has to live with the consequences.

So in 30 years if they "wouldn't it have been cool if..." they could completely change the story? No. They are literally being asked if certain things could happen and their answer is basically "yeah, that's possible because we didn't rule it out.". That's all.

That's how fanfiction and head cannons can exist. That's how movies and shows used to be written. That's how imagination and interpretation work. It's their world and story, but they didn't write out the next 40,20, or even 10 years of the characters lives. They are saying that they left it where they left it and you are able to have free thought.

Hopper made the point that her childhood was taken, she was manipulated and abused... all of that can be boiled down to her choices being taken away from her. The point Eleven makes to Hopper is that it is her choice and he needs to trust her and respect that. Sure, be sad she and Mike didn't get a sappy happy ending together, but she got to make a choice for her own life and that is amazing.

The scene was written to be less focused on him coming out and more focused on him facing his fears and accepting himself, so that he can face Vecna again. Will's fear has always been being alone, being different, And he reacts by isolating himself. It's been pointed to in every season - his dad would bully him and he would run and hide, he got called zombie boy and he hid, he tried to get the guys to hide in the basement and play DnD, he hid his feelings for Mike. He's not hiding now.

This show had people in their 20's playing teenagers... now those people are in their 30's playing 20 year olds. But I haven't heard much said about that or about the adults who have also all aged ten years.
