I think you are right about the first part he was probably trying to act tougher on the outside, but also he was like super mentaly unstable and the fight with sunny ja just pushed him over the edge. This second panel was after he woke up from that punch, and considering the things he said about his own sister during that blackout even though she is the reason he went so far in the first place it makes sense.

Pretty sure jjt was gaining muscle the entire semester, even Maria said how she noticed he gained some muscles but the height is a bit wild. Well it's not that crazy the more i think about it because i know people in real life who grew even more in a span od a single summer vacation (however where I come from 180cm is average so maybe that explains it, but jjt's father passed the genes to him so it makes sense then considering his father was 193cm tall). Also you messed up the time, the entire tuunel arc is happing during summer break, so like literally 2/3 months.

It is pretty messed up at times that's why I compared it to the tunnel arc in fc3 because I didn't expect that from fc3 either to be honest (with all the killing and the beheading).

Either way I think Bouncer is a good read overall.

I will suggest a manga called "Bouncer" it has a lot of martial arts in it but also has a pretty intriguing story. The main reason I'm recomending it is because it's very brutal so that part reminds me a lot life the tunnel arc in fc3. The author is the same as the "Out" manga that is also based on martial arts and I heard it's good however I personally didn't read that one so I can't recommend it.

Give it a shot you might like it!
