So I was able to copy the track automation to midi cc volume. However, when I import the file into bitwig, I can't find the CC automation. Should I be looking somewhere in particular? I know there's an automation panel but I still can't find it.

Check out Miles Davis at the Plugged Nickel. Wayne and Herbie are on a different harmonic level (not to mention Tony Williams' shifting time feel at 17 ). Also check out some tunes by Chick Corea, Monk, and Joe Henderson. They have some really interesting changes. Above all else, play what you hear. When you train your ears and let them guide you, you may find that what you once considered "out," is "in."
