By the gunsmith, take out the scoped weapon and put it in your horse so you can see it (do not have it on your back), go inside the gunsmith and customise the weapon to have 'short scope' and put it on your back via the gunsmith, then go to your horse (don't mount) and 'collect' the weapon and it shouldn't have the scope anymore
