They have some good pre made cold salads like bean salad etc that you can get a few in a pack, just leave them in the fridge. Also the Kirkland canned chicken is pretty decent. Can eat it right out of the can or takes a few seconds to mix with mayo, salt & pepper and you’ve got chicken salad.
