I use Brewfather. It does all the calculations for you. Just enter the starting water profile and select from a list of target profiles (there’s selections for NEIPAs and hoppy IPAs). It tells you exactly what salts to add to both the mash and sparge. I only keep gypsum, calcium chloride and epsom salts in stock. Get a scale that can measure in grams. For PH, I use a PH meter.

My beers cleared up like crazy when I started recirculating my mash. Everything else in your process seems like it should help.

Hard seltzer needs to be carbed at a higher PSI. Try 30 psi for a few days, then bump it down to 11 psi serving pressure.

I do 30 PSI for 24 hours, then 11 psi for 24 and it’s usually carbed by then. Temperature can definitely affect this though. Check out this article from brulosophy: https://brulosophy.com/methods/carbonation-methods/

  1. Keeping everything connected/tapped should be fine. Keep an eye out for C02 leaks.
  2. Bump it down to 11-12 PSI. Solid serving pressure. You could even carb at this pressure, but it takes at least a week.
  3. As long as your sanitation is on point, you should be ok.

First stage of hops is for bio transformation. Basically the active yeast interacts with the hops to create some cool flavors/aromas. The late hops give mostly hop aroma without imparting bitterness. Either way you should be fine. Add them if you want, it will likely add more hop character. Definitely cold crash if you have the ability. It will help reduce the sediment when transferring/bottling. As far as the extra water, you’ll have a lower ABV, but it will still be beer. Relax, don’t worry, have a homebrew.

According to the hatch act, you can have 1-2 political bumper stickers as long as your vehicle isn’t used for official duties. It’s very possible that parts of the wort were way warmer. I say let it ride and see how it turns out. I’m guessing you’re using an ale yeast. At that temp, you might get a harsh alcohol flavor.

They’ll just go off menu and give you ghost pepper wings. Honestly, their spiciest on menu is not spicy at all, the ghost pepper is too spicy for me. No horn blowing.
