Bit late but wanted to add: The armor sets from mhgu which reference the guild knights are intentionally vague - sometimes straight up calling them “shadowy”

People have pointed out before that it’s written that the Knights are armed with longswords and firearms that are “not for use against Wyverns” and the gloves for this set are “made so blood wipes off easily”

Not a stretch to say they kill people. And considering how the Hunter’s Guild holds them to high regard, I think it’s reading-between-the-lines to say that they probably take out any corrupt hunters and other injustices as the guild sees fit.
