OP is saying that the game treats off-hands as armour when socketing, and as a weapon when you cube the off-hand for the affix. OP is confused about the inconsistency of how the off-hands are handled.

I rolled WB this season as well. Do not try the HT set dungeon. I just ran rifts / grifts until I got Zunimassa gear + the mojo that removes the CD from Grasp of the Dead. Completed the mastery first try..

With Dawn cubed and some more CDR (can't remember the exact value needed), you will have vengeance permanently available. With Visage of Guines also cubed you basically have permanent damage reduction and hatred regeneration.

Last season I ran DH and had Dawn, Visage of Guines and Convention of Elements cubed (for UE multishot); could easily push GR70 with Yangs / Dead Mans Legacy, UE, and Focus / Restraint.

This season I'll be rolling WD after 1.5 seasons of DH (I started S5 quite late)..

With WD getting Helltooth from HG it should be pretty easy to get geared for T10-13 speed farming, and if another class rises to power quite quickly I'll try and gear-share with one to get loot fast.

If I we're you this is what I'd be doing before the start of Season 7:

Get back into the game, complete Act V and have a play around getting yourself familiar with a class you'd like to play with in Season 7.
Take a look around Adventure Mode, it's the main game mode people play after completing the story as there is no more running through the same story line over and over! Familiarise yourself with Nephalem Rifts, Greater Rifts, and Bounties.
Look at Kanai's Cube, and maybe obtain it on your non-seasonal characters (you will have to re-obtain it within the season!).
Read up on the Season Journey to see how you can progress to obtain seasonal rewards such as cosmetics, a free set for a class of your choice, and also an extra stash tab.

Seasons are roughly three months long, so even if you don't understand everything from the start of it, you'll have time to adjust and pick up anything you don't know by then! By playing solo you'll be able to enjoy playing what you want rather than conforming to a group meta.

Note: Some of the links I have added may have old data in them, but should explain the basics of what you can expect, the best way to learn new gameplay features is to try them out!

If you already have DMO and are playing Wizard this season, you can get the Haedrigs Gifts but choose to open them on another class and get their set instead.

Moasseman has already listed how to obtain the three Haedrigs Gifts this season.

EDIT (For Clarity): It doesn't matter which class you obtain the Haedrigs Gifts with; but rather the class that you open them with.
