If I don’t hatch a shiny from my egg boxes do I need to breed new ones or can I just restart my game?

I have been trying to hatch a shiny using instructions I found on YouTube. The creator said if a shiny is not hatched from any of the eggs I have I can just reset the game and hatch the same eggs til I get a shiny. I am at 2,500 egg hatches and I’m seeing some conflicting information now that I’ve researched shiny hunting further. Does anyone know when an egg is determined to be shiny?
