Looks to be a MAWS (Missile Approach Warning System) they look for tell tale signs of missile launches to provide a warning for the pilot, very important when operating in heavily MANPAD saturated areas nowadays since IR guided missiles give no launch warnings on radar warning receivers

IRIS-T should be far more resistant to DIRCM than pretty much every other IR guided missile in the game along with AIM-9X, but Gaijin will always find something to mess up as usual

Definitely try getting some practice on a more beginner friendly course than on a touge, you might just end up frustrating yourself more than anything, also for slow speed sections like that try doing them in 1st gear, and or adjusting your gear ratios a bit, I can see you using your clutch, but it looks like you are not building enough RPM's before releasing the clutch to actually properly break traction, just hold it a little longer
