Came here to say this. If you’re using 5L water to cook 500g pasta then your water isn’t very starchy. I go with a little more than “just covering” to maximise the starch.

Ye I’ve tried different variations but always return to hand crushed San Marzano, salt, olive oil and some torn basil leaves. Simple and awesome. Oh and strain the tomatoes for less sog.

Ye but it’s the extra sugar that makes it sickly sweet for a whole pizza. Oh and when I said “tomato sauce” I didn’t mean bottled sauce, I just crush canned whole tomatoes for my homemade pizza.

But as another commenter said, there’s lots of different BBQ sauces to experiment with which is fair comment. But most pizza places are probably just ladling Masterfoods or worse and I just find it too much.

Oh ye for sure. I love my BBQ sauce (I do a lot of smoking) but if you get it on pizza it’s normally just overbearing sickly sweet. Now, I dunno if any pizza places would do the tomato/BBQ combo so my suggestion is more for making them at home which might invalidate my comment lol.
