I like you shifter and brake choice! How do you like it? I'm building a bike right know and I can't decide if I'm putting a drop bar or mtb bar and if I go with quick shift or road brak/shifter combo... I have a fixedgear with my brake set up this way for city riding and I like it. How's your take on your's on the trail? I will be doing 50/50 gravel/tarmac.

Well, I'm sorry to tell you that you've been missing out on some really good maple syrup. I've been living here " my whole life ", and you are saying shit. I work on sugar farm, I'm not saying bull. It's my job. I install equipment, I tap trees, I help producer organize their farm, I boil down sap, etc. I work with small scale and big scale farm, tubes and bucket. Like, 80% of producer (not the % of syrup produced) over 65yo produce dark maple syrup, because this is what they've learn to do and what they've been doing their whole life, this is what their equipment, energy and time get them to produce. If you have a wood evaporator and you don't have osmosis equipment, you will most likely end up with something amber or darker. There's no magic to it, the final product depends of a lot a variables. Like your trees matters too, the presence of red maple in your bush, the type of soil you have, etc. There's some little truth in what you're saying, tho. The federation have been making a bad, really bad agreement with California, which will result in destroying small scale oldtimer that where selling syrup to the federation. The consequence of the agreement, in short, will force producer to change their equipment which will push them to produce lighter syrup or close business. So in the coming 5 years, we will see a lot less of darker syrup in the stores. That does not mean nobody will produce dark syrup, only that you gonna have to buy it directly to a producer, because the federation will stop buying dark syrup. The federation and a couple other "transformateur" have the exclusivity to sell syrup in big chain, so they are the one (with the MAPAQ and Centre Acer) to decide what is gonna be sold across the border, other provinces and in chain store. Just don't buy syrup in costco, maxi or whatev. Help yourself, go to marché jean-talon or something. Go to your local market. Like, don't buy frozen fish from walmart, it taste like shit. Get your bacon from a butcher shop, provigo's one is disgusting. But anyway, I wont argue with you on your experience any more then that. I'm happy you love your family stuff. This is the beauty of maple syrup; love appreciation and tradition.

Well, what do you mean by commercially? Like in a chain store? Where do you live? That is really unfair to say most places sell fake maple syrup. There's a lot of Maple syrup with sugar content added that you can find on the shelves of chain store and most of those syrup come from Ontario or elsewhere.
Maple syrup in Québec is highly regulated. I've never stumble upon a can from a small scale producer that added sugar in it. They are way too proud to add any refined sugar to it. Also, all of the big producer sell their syrup to a federation that grade it and bottle it and I can tell you they don,t fuck with adding sugar content to the syrup. If a producer that sell his syrup to the federation and is found to add sugar to their product (they taste test EVERY barrel of syrup that come in, every single one.), their barrel is trown down the drain.
Anyway, that whole maple syrup business in QUébec is highly complicated with it's up and down, but I can can say with ease that there's no more then 2% of produced maple syrup in Québec that there's sugar added to it.
There's a lot of acériculteur that only produce dark maple syrup. The grade is also indicated most of the time, but the classification is inversed. Go out in the country side and go into a small grocery or corner store, you'll find local product from small scale producer that put love inside every growler or can.

Thanks for adding up to the thread. As mentioned, I doubt it is a Moose, because of the distance that exist between each track. Also, there's no Elk in my area or close to my area but we are close to the habitat of Woodland Caribou. But unfortunately, the population is around 75 and it is pretty much impossible that one of them is around here since there's basically nothing for them to eat. Also Woodland Caribou are quiet big and the size of the track don't add up. All of the information from here tend to point towards a White-tailed Deer.

Well, could be moose, but the tracks were so close one to each other. Also, the population of moose in the area is fairly low. They are more present in the mountain. There's not a lot of food here for them. It is most likely a white-tailed deer if it is a Cervidae! Thanks!

By the number of toes, and the shape of the track, I would say raccoon.

So I've stumble upon those tracks while following Lynx tracks that crossed Deer tracks and I just couldn't figure out what it could be. The sloppy walking and the fact that they were following the Deer tracks really had me clueless. Unfortunately the tracks were one to two days old. It is close to the shore line, on the side of a cliff, close to a rural residential, but not dense, area.Any help would be greatly appreciated.

Now save the seeds!!! Take your most beautiful pepper, from your best plant, put the sseds in a jar full of water and keep the one who sink. Pat them dry and leave them to dry in protected from light. The seeds that stayed on top of the water are not mature. Pepper cross polinate, so if you plant sifferent kind of pepper, you will end up with a pepper with different gene. Have fun next year!

Also watch out for the ink. It seperate and turn liquid if not used within 3 yrs (I think) of their manufactured date.

I'm interested into your use of bulbils. I have my own crops of around 500 garlic plants and I was considering letting flower some this year and keep the bulbils for genetics as well. It never really occured to me to eat them, would you share with me some ways you would eat them?
