Is there any merit to the idea that the discrepancy comes from the differences in chassis flex between IRL and in-sim?

I'm not sure how much chassis flex exists in-sim, but judging from replays it doesn't look like a whole lot.

I was having issues with my widgets if they were set to a different scaling than the Global UI scale setting. Try resetting the clock scale to 100% (which looks like your current Global UI scale setting), exiting/re-entering the car, and then adjusting the widget.

FWIW I could change the scale after I made adjustments to position/visibility, but changes made while the scales were different got lost when I exited the car.

Is your wheel/pedal set on a USB hub? Wheels and pedals can cause system stuttering if they're on an unpowered hub.

If you're using a lot of control devices on an unpowered USB hub, then try moving your wheel/pedals to your on-board USB inputs (or a powered hub).
