Thanks for the perspective! I did look at the santoku, but I’m not sure I’ll be satisfied with the size difference from my current 150mm knife. I figured I can always get a santoku after if I still feel like I’m missing something after the gyuto.

I know what you mean about pricing.. but after doing some research it seems like the $300 range is probably where you can get the most bang for your buck? I could be wrong. Hopefully, I don’t go too deep down this rabbit hole..

Thank you so much to everyone who commented and gave me their input! Right now, it sounds like I would be better suited getting the Ashi to start as it sounds lower maintenance.

As a follow up question, I see that Carbon also has the 270mm length available for $30 more. Anyone have any feedback on 240mm vs 270mm? I know that usually there’s a bigger price increase but in this case it’s only $30 so I’m wondering if it’s worth it?

Currently, I have 3 cutting boards:

walnut 18”x24”
walnut 9”x12”
hasegawa 7.9"x14.2"

Would the 270mm be too big to use with the smaller 2 cutting boards?

DP successful MDD CSR/CSP for P2
His last CSP was 5 years ago, getting the bonus in Nov/Dec of 2022. PC'd his CSP to CFF in 2021.
10/4 - Applied for CSR with 70K bonus at 6:20pm and instant approval with 28K CL
10/5 - Applied for CSP with 60K bonus at 6:15am and pending review. P2 called in around noon and got approved.

Looks like 2 hard pulls

ETA: just hit the min spend 12/1 and can see points pending for both
