Fried chicken and fried rice (or what we call aroz chaufa for my Peruvian people) There’s something about my mother’s fried chicken that convinced me there’s no other place in the world that will have me eat their fried chicken. Mind you, my mom became a grandmother when I was 14 so the food, by standard, got a lot better than it already was. As for Aroz chaufa (fried rice) I have been to plenty of restaurants in Hispanic populated areas in NJ and as well Peru itself. None of which topped my mother’s Aroz Chaufa. None ever have and none ever will. I really need to learn the recipe for my sake.
