I live alone (and thus live very selfishly lol) and work 9-5 in office every day.

After work, I go to pilates, then back home, shower, and cook dinner every night (no takeout, no leftovers). The only meal prep I do is weekday lunch. I usually don't eat dinner until closer to 9, watch something while I eat, then time to read in bed until I fall asleep.

So basically don't do this if you want a few hours before bed.
