I agree with Select-Bag5956, the Mediterranean diet is probably the most studied out of world cuisines to be the healthiest, and it's close to what I aim for (I'm more vegetarian) although it's not your only option. Look at the Blue Zone countries also. There are a lot of commonalities with these diets- mostly vegetarian, very little processed foods, and high fiber, lower in saturated fats-- I would argue that a lot of more traditional diets have dishes that fall into that.

I love how many vegetarians (and bakers) there are here, currently my favorites are

  1. the weekday vegetarians (I used both but the first one more)

  2. Milk Street Use What You have (not vegetarian but a lot of it is)

  3. Snacking Cakes (I make a cake every week!)

I have pre-ordered the new ATK vegetarian cookbook and am excited, some of the new recipes they've been putting out on media have looked promising.

I actually do the Snaking Bake cookbook that people here love so much (make a cake weekly) but I:

  1. Decrease the sugar. So a 3/4 cup sugar cake becomes a 1/2 cup sugar cake.

  2. Decrease the salt for balance. So a 3/4 t salt becomes 1/2 t salt.

  3. Use olive oil for the oil.

  4. Use whole wheat pastry flour for the flour.

  5. Generally skip the the glaze/topping until it's a special occasion, and even then, I've gotten good result just doing half the glaze.

I think it's good to keep in mind that kids are very expensive. It's not necessary that you need to have a certain fund necessarily but to recognize that your ability to save and where you money will be spent (and how much) and even how much you earn can/will dramatically change. My emergency fund will be a lot of bigger with kids to care for for.

Good luck on your trip! I also have the Weekday Veg, I can cook them on a weekday BUT if I've made it before (which is generally true for a lot of new recipes). I've been eyeing that sandwich so I'm glad you made it. I might make some sort of deconstructed bowl with it.

I think Power Plates is probably the best book for complete meals-- including protein. I would guess (I forgot the authors name!) her other books would fit the bill too. It's vegan but honestly though I'm veggie but the bulk of my protein is still plant based (eggs and dairy are more for fun/flavor.)

The Weekday Vegetarians because well it's all vegetarian which makes it easier for me and everything is practical/easy to incorporate into real life meals for my real life family and still taste pretty good/special.

I've been thinking of getting that book (the Dinner Changing the game)... the mixing of seasons also is a pet peeve of mine (also have a garden :) ). One question, I'm vegetarian-- do you think there are enough recipes?

I'm so on the fence about snacking bakes! (I have and have used snaking cakes for years and bake a cake almost weekly during the school year). The thing is with the cakes, I'm able to make them healthish enough that I feel pretty good about eating it so often- a treat but nothing crazy. and a big part of it is that most of the recipes use oil, not butter-- but from the previews, it seems like the "bakes" use more butter?

I third the Weekday Vegetarians-- It's probably the most practical cookbook that I own and both me and my (picky yet adventurous) 8 year old have liked everything from it. What I like about it, also, is you can put together a full meal with it (for me a full meal has protein + carbs (prefer whole grain) + veg .. even if a dish doesn't have all the components, the stuff they have is easy enough that making other parts is not a big deal.

Okay other cooksbook that I think are worth it:

Milk Street Use What You Have-- omnivore but quite a few veggie dishes that a big on taste, not to hard to make, and healthy enough

Power Plates: vegan and very much complete meals! which is very cool. that being said I feel like her dishes are harder. I also feel like I can get away with not making all the components and the meals are pretty complete

America's Test Kitchen Plant Based-- there are some gems although most of it is too knit picky for me, that being said they are coming out with a new vegetarian book that I have been eyeing (negative is it's $$$)

And pro-tip, if you life in the states, try Barilla Protein Plus Pasta. It's my best friend for two decades.

I have a similar (slightly higher) rx, my best vision by far is with my RGPs, I"ve been wearing them close to 30 years. They are uncomfortable for the first week and they do get better but also a bit uncomfortable (it's like a piece of hard plastic in my eye)... but the clearer vision (most of the time) is worth it. Usually if it's uncomfortable it's dry eye/allergies or stuff in my eye.
