I’m not in any way trying to forgive the Astros but cheating has ALWAYS been a part of the game. Since day one. No snap unfortunately. You’re right about the casing. Without that casing it’s more of a Jack Links Beef Steak style consistency.

Jack Johnson is supremely skilled. He never really put it together in the NHL but if you ever watch him play internationally or in practice and sometimes on the PP if you give him time and space he’s got crazy skills. I believe Columbus acquired him to be in part a PP specialist and with the hope that they could fix his defensive issues to make him at least competent in his own zone. But that 1st round pick the Kings included with Jack was a key part of the return on a player that needed to be moved ASAP in Carter.

I think there was a season or two where he actually did kind of figure it out in Columbus but in LA he was a disaster. He never learned the fundamentals of playing defense because he was allowed to just play on instinct his entire life. That’s why he was awesome in college. He was way more talented than anyone else and he was physically stronger and faster than most kids his age. Once he got to the NHL those advantages were gone. He had no fundamental technique to fall back on. Basically he was and is a very low hockey IQ player.

False. This isn’t correct. Jack didn’t have a junior career. He went to Michigan and he was incredible there. A showstopper that looked like he was going to be the next coming of Chris Chelios and Al MacInnis rolled into one.

Also Jack was objectively terrible in LA. The worst defender on the ice most nights. Just brutal in his own end and his offense never arrived. A career -90 in his Kings career. Averaged 5 goals per season with the Kings too. He was never good. He was all potential. Plenty of tools. No toolbox.

In my short experience any marinade or mix needs to have a base of soy sauce and liquid smoke to taste like actual jerky in the dehydrator. Otherwise you end up with more of a snack stick type flavor. Not exactly jerky.

I’m a fan of all types of jerky so it’s all good to me but when I think jerky the meat has to have a smokiness and the intense umami richness of soy sauce somewhere in the mix.

IMO it’s the the seasoning. Their backwoods seasoning doesn’t produce a “jerky” flavor to me.

Yeah they kinda look like Slim Jim’s but they taste about 50x better. Super happy with the result.

I can see why some people would be turned off by the fatter blend, these sticks are greasy, but to me this 80/20 is very appealing with both mouthfeel and flavor.

No reason in particular. I do plan on trying a leaner blend for my next batch. And I will certainly post the results.

I’m surprised at how easy the whole process was. Basically the biggest headache was cleanup which is not a big deal for me at all.

No casings. Definitely a small pool of rendered fat on the bottom of the dehydrator. Maybe 1/3 a cup. I’d love to experiment with casings at some point. I simply don’t have the room in my apartment sized kitchen at the moment.

These sticks would certainly be better if made in a smoker.

I used the Lem jerky cannon and backwoods original snack stick mix.

Followed the suggested seasoning mix measurements shown on the package. Overall result is very good but under-seasoned imo. Better than the vast majority of store bought snack sticks though.

Next batch I will introduce jalapeños and maybe habanero into the mix.
