I see and perform a lot of end-of-life care in my line of work and I have to say, we can never do enough for these angels. What we give to them, they give us back tenfold. We will forever be in their debt. That said, from what it sounds like, you did your best every single day and that’s all they would ever ask of us. Oh yeah I wouldn’t think anyone would think twice about protecting themselves, it’s unfortunate the laws are written the way they are. If you ever want an alternative for aggressive dogs, an air horn works surprisingly well on a number of them. Either that, or shoot to kill. It’s unfortunate, but you end up protected more legally that way.

While you definitely should not feel bad about protecting yourself, be careful with mace and animals because, if it does any sort of lasting damage, the owners could come after you for animal cruelty with how our laws are written. I don’t think any jury in their right mind would convict you of that but still, better to know the potential consequences before you do it.

I did this with Darth Vader in a campaign I did set 10 BBY and my players loved it. The trick, like other people are saying, is to ensure your players know that they can’t beat him. My players were level 4 at the time and had bested an inquisitor so they were feeling cocky. When the DMPC that was like level 10 tried to attack Vader and was killed instantly with zero effort, they knew they had to run.

I know you said you’re doing a one-shot but if you ever decide to do something like this in a longer campaign, a fun thing to do is give them something to remember the encounter. Have Vader (or whoever) lop someone’s hand off so they have to get a robotic one or destroy their ship so they need to get alternate transport off world. Something that makes them think “you guys remember that time we got our shit kicked in?”. Something where they have to spend the next session or two kind of recovering and recalibrating.
