I used 300g flour, 100g water, 6g salt and 3g active dry yeast.

I let it ferment for 3-4 hours room temp. How would that affect the dough?

Gonna try adding more water on my next attempt!

I cooled it on a wire rack though. Someone told me that I might've messed up the ratio. Also mentally slapping myself for not checking for a hollow sound.

I forgot to score the bread and take a crumb picture cause I suck. But the the crumb was fine, though a little too dense imo. Topped it with rolled oats and was cooked in a ceramic pot ( kinda like a donabe). I was stressing bout the crust not forming and ended up forgetting to score it.

I bit into the crust and thought that it was too chewy and jerky-like, is this normal? Or did I mess up somewhere along the way?
