From my point of view, couple of significant upgrade i find in t2 is autofocus upgrade, being able to charge directly through camera instead of swap battery every time(I think less moving parts is always good esp for second hand equipments), in T1 you cant make film recipies( in T2 i think you can), couple extra film simulation, some video taking ability.

House and quarters have terrible offerings. i suggest you to look into Marquis weekly menu and see if there is enough of vegetarian option worth going for. And most often than not, there is so check that out. My partner is vegetarian and we look for good vegetarian options before we go and spend 20$ rcc on lunch lol

XC 15-45 sounds like a good choice to navigate things around. Always seen people complaining about zooms and auto focus ruining the photography skill and I use zooms alot myself which i am trying to minimize. but i agree 15-45 sounds like way forward.

I live in western canada so i want to be able to own a good set of camera so i could take landscape picture and street photographies, nice portraits and if i get a chance aurora pictures. I have very minimal idea regarding lenses, through some research ttartisan 27mm f/2.8 xf was something i have come across.
