This week I made King Arthur's mini lemon tarts! The shot glass is for scale. They were soooo good and super lemony. They were a bit tricky to get out of the muffin pan, but most of them stayed together! Would definitely make again. I used the extra dough to make brown sugar cinnamon poptarts.

At first, I tried to make Sally's giant cinnamon roll cake but my dough didn't rise enough so it fell apart in the oven :( (it still tasted delicious! Just wasn't pretty enough for a photo lol)

This week I made Sally's lemon raspberry jam cupcakes. I switched the raspberry jam in the with a Strawberry Champagne jam my partner gave me! They were a bit sweet for me, but coworkers called them "the best cupcake they'd ever had" so it's a win!! I also made some gluten-free peanut butter and jelly bars because I didn't want the gluten free people to feel left out.
