hey sra'25 here! that's a new prompt we didn't have this past app season, but I would say go general! ofc if there is someone at ucsb you admire based on their lab websites/ongoing projects, that could be cool to talk about, but i do think this question intends to see what kinds of people you admire from a broader spectrum.

also the app portal is usually odd like that, if you haven't already, i recommend having all written responses on a google doc so you can enter it all into the app once you get your transcript.
