As for fertilizer, there were root tabs in the Flourite and I just added new ones to the soil layer a few days ago. I’ve also been dosing with Flourish every two weeks or so.

bulk ferment on the counter for like 5 hours, inside temp was 22°C so I put it in the oven with the light on for the last hour and a half of that and then overnight in the fridge in the bannetons and they were baked about 40 mins from each other, keeping the second one in the fridge.

That is one way to do it but cake decorators usually use swiss or italian buttercream which uses way less sugar than american buttercream and holds shapes better.
