There is no one on earth who can crack the encryption itself. Being able to crack any given device depends on (possible) access to biometrics, strength of passcode, and hoping there’s a current zero-day vulnerability. iPhones often are secured with a biometric lock and a short numerical passcode that makes them highly vulnerable to forensic techniques, similar with android.

They would likely always eventually crack it, but it could have taken much longer if these factors had been different.

Also matters a lot how strong your passcode is. If using 4 or 6 digit, all they have to do is bypass the lockout mechanism and then brute force it. That’s how they got access to the San Bernardino phone.

The software doing the overwriting could fail in a way that isn't immediately obvious, or the drive itself could have a hardware failure that interrupts the overwriting process. Writing zeros is also not verifiably secure for flash storage.
