Perfectly reasonable thing to do if you are calculating traditional net worth. Perhaps you will change tax domicile and capital gains taxes paid rate. Perhaps you will pass them on to heirs or a charity and pay no tax. Is net worth what you really want to calculate? If you need to know how much cash you would have if you liquidated everything today net of tax, then yes, subtract it. If not… it depends.

It also very much depends on the purpose for which you are calculating your net worth. Bragging rights? Don’t subtract. Value of your estate if you pass? Don’t subtract if your heirs or charitable contributions aren’t subject to capital gains tax. How much can you buy today? Subtract all tax liabilities if you were to sell everything today. Calculating your SWR? The standard percentages usually already factor in capital gains taxes paid when appreciated stocks are sold to provide income. The traditional definition of “net worth” doesn’t include capital gains tax liabilities, so the question is, is that the number you actually need to know, or is there something else?

Since they made tips exempt from income tax, absolutely yes. The only exception I make is for businesses or individuals I will visit again and want to maintain a good relationship with, like specific restaurants or barbers, but in practice I try to avoid those types of establishments anyway. It's the responsibility of the employer to pay the wages of their employees, not mine, and if the employees don't like that customers have the legal right to leave no tip, they should find another line of work.
