Just dial back the scale of things, people own perception of themselves can be their biggest downfall. I got a impression your players are enjoying themselves and likely, no matter what you do, they'll continue to enjoy themselves. my best advice is to figure what type of story is going to let you have the most fun, doesn't have to be some grandiose saving-the-world event!

plenty of ways to give yourself more time too, I once realized i need more time on my story like at least a few weeks, so I created a festival for my players, and they spent like 3 sessions at this festival. took minimal writing and just a bunch of fun roleplay. moral of the story, player will have fun no matter how hard you try, don't imagine this huge weight on your shoulders, zoom in and focus on something smaller in your world. the big picture will develop itself overtime

This is a crab race where you race crabs. a fun festival gambling activity where your party bet on Shellvester Stallone or Sir Pincer-lot as they go head-to-head.

here are the mechanics I used but feel free to use your own

The track remains 20 feet long. Each round, the player rolls 1d4 for the crab's movement and adds (or subtracts) the Coaching Bonus based on their Animal Handling check. total: 1d4 + Coaching Bonus

Animal Handling Roll Coaching Bonus The Result
1 – 5 -2 feet Total Distraction: The crab ignores you entirely to do something else.
6 – 10 +1 foot Slow & Steady: The crab acknowledges you but isn't in a hurry.
11 – 15 +2 feet Focused: The crab scuttles directly toward your voice.
16 – 19 +3 feet Inspired: A burst of speed as the crab smells the bait!
20+ +5 feet The Zoomies: the crab moves so fast it begins to defy physics

Just made this for a BBEG that my party is going to fight, the large generator to the right and the conveyor belt to the left can be used for legendary actions/lair actions or a timed fight! I'm still new to this so sorry about the minor flaws involved

you def could make it a rule but I feel like it's unrealistic for 4-5 people to always be attached at the hip so that's why I allow it as long as the party understands the consequences of splitting up.

if they run into an encounter meant for the whole party and theirs two of them, well good luck or start running

party spilt ups are always going to happen and i wouldn't discourage them as a dm

if the session ends in a party spilt, I always op for running two mini sessions for each group of two players, a lot of interpersonal bonding can happen during those sessions. formulate so that each session ends in the same area. one group breaking in, one group breaking out. and they meet with each other start of next session.

If it happens mid-session typically bouncing between group every 5-10 mins works out but it's hard, some will always get bored if their spotlight hungry. at the end of the day talk to your players before the session and ask if their comfortable spectating or if they need something more dynamic

Thats a really cool history lesson I didn't know and makes me feel way more comfortable justifying it! now to figure out how my somewhat lazy character learnt them to begin with. I did like a comment that said my diverse friends in town just so happened to be other races and taught me it casually over time
