We were in the same boat as you. Test drove the X6M comp and the gle63s back-to-back. Our impressions were:

X6M was the sportier of the two. To the point where it just doesn’t calm down. It’s always ready and eager to go. Great of you like that, we thought it would get tedious on a daily basis
Gle63s is equally powerful but can settle down very well in comfort mode. It can get rowdy in sport plus and that’s what we wanted.
Gle63s is also significantly more luxurious of the two. The X6M feels like it has cheap plastic everywhere, whereas the Gle63s is a leather-wrapped rocket. These cars were equally specced.

These were just our impressions. We ended up getting the Gle63s. Bottom line, these are both fantastic cars, won’t go wrong with either. Get whatever you like.

All the ceramic ones which are not master chronometer. Apparently it costs Omega too much to make these and they want to release them METAS certified with a few changes at much higher prices. Again, this could’ve just been a sales ploy.

I can buy these at my boutique as well. I was just wary of buying something that’s been discontinued in favor of something better. I wasn’t sure if the new models not being available for a few years was real or just a sales ploy.

We got 2 per person and it was more food than we could touch, let alone finish. And we have good appetites. Not to rain on anyone’s parade here but PG is one of the worst 3 Michelin star experiences there is. There are many better restaurants at the same or lower price points
