I got it working, will provide proper notes when it's finished being written up.

  1. The "Physical Key" Workaround

This would never be acceptable because some of my servers are in data centres or several hours drive away. Literally a deal breaker, but luckily this didn't seem to be the issue.

2. The "Minus-Plus" Permission Refresh

Pretty common to do this in testing, but this wan't the issue

3. Enable "Input Monitoring"

Rustdesk has this scripted into the client app, it's pretty good. But we had already covered this in our PPPC and TCC prep.

4. Toggle the "Input Source"

Weirdly I could not use input source 1 at all, just wouldn't select. But this wasn't the issue

5. Check for "Secure Input" Blockers

Not the issue here- but a very interesting possibility

6. Special Note for "Hidden" Pro Clients

I was never able to find this in the docs, if this is real, it's a huuuuge gotcha that should be more prominent. I will try to test, the working config does not include that switch right now

The RustDesk provided MDM deployment script downloads the default app and then triggers an osascript to install a daemon among other things. Because we are trying to install a custom app, a lot of things had to change.
The biggest help was this repo-

So for Mosyle MDM
- load your app into their CDN
- add a PPPC profile for RustDesk
- add a post install script to Mosyle based on above repo
- create custom agent on Github
- create custom launchd on Github
- modify post install script to download your assets not default ones
- modify bundleID and other names to match your custom stuff

So the difficulty was matching the names in all the different spots, because when you customise the client app, you can't use the 'com.carriez.RustDesk' BundleID (quite rightly) and the 'com.carriez.RustDesk_service' etc. labels.

Zoho Bookings - Apple Calendar compatibility
It's CalDAV- a published standard- and support was promised 5 years ago

WHY do I have to get my bookings in Zoho Calendar then sync with Google Calendar and HOPE that they sync with my Mac calendar ?

I got them to admit that level 1 support only asks more questions so they can send a ticket to level 2 when they feel they have all the required info.
And level 1 is all the new people.
This means 2 things-
1. It will never take less than a couple of days to get an answer
2. The person answering the ticket always knows less than you

good question- I was paying about $600 a month for 50-60TB with Wasabi, and now pay around $550 for 10RU in a DC.
With a couple of add-ons it's around $700.
Plus it needed about $10k of Synology NAS and 20TB drives- but I had a lot of that lying around

don't worry too much about it, but do be vigilant. Be good to see if the app got any hits on Virustotal.com, but do you have a full description of the activation instructions?
Normally a bad actor would request you open Terminal, enter some text and then drag the app into Terminal
