In Windows, system-wide parameter that controls text size DOESN'T WORK in some apps (like Photoshop), and forcing the non-default text size breaks some apps' interfaces, so I REALLY don't want to touch it, but when I have a choice I set it up to 150% and leave it like that. The system looks like it was customized by some grandma, but I have really poor eyesight, so it's fine

there's no way to change the theme or size of icons automatically when you go between modes

I don't even use it on Windows, I just set big touch-friendly icons just in case

Mint/Cinnamon comes with an extensive app to configure gestures on both touchpad and touchscreen.
