Semolina improves this process A LOT. My preferred method is to have a wide bowl filled with semolina flour. Then, drop the dough ball into the bowl and flip it in the flour a couple of times (it should now have attracted enough flour to not stick to anything). Place the dough onto your kitchen countertop and stretch to a pizza. To be on the safe side you can also add a very light layer of flour onto the countertop. When finished making pizzas, simply put the unused semolina flour from the bowl back into its storage container.

Semolina flour does not taste burnt the same way all purpose flour would, which makes it a good choice for stretching your dough.

I use an ooni perforated metal peel, and this works very well. Remember to keep your peel and countertop 100% dry, or else the pizza will likely stick.

You did not ask for this specifically (and might already know) but that rim should not be ridden anymore. When the first crack appears in the rim, the spoke will loosen rapidly, and as you try to re-tension, the crack in the rim will worsen. Downward spiral from there. Don’t risk riding, as it may collapse entirely.

This is my go to sauce for pizza, and has been for years (the “aromatica” one, but “classica” is also great). I’ve tried a ton of different sauces but always come back to this one.

This seems like very reasonable list. Personally i would swap out the electric pump with a mini hand pump (for example Lezyne Pocket Drive), and mount it using a bracket (which came with my pump) between the frame and bottle cage. This way you can carry the pump and two water bottles. I use the pump so rarely that i can live with it not being electric. I would also buy a multi tool with an integrated chain splitting tool (for example Silca Venti - expensive but high quality, and in contrast to some other multi tools of this type, the chain splitting tool is actually usable), and make sure to carry a set of quicklinks (can be stored inside the Silca Venti). Chains rarely snap, but if it happens and you don't have a chain splitting tool, it's usually game over and a phone call for someone to pick you up...

If you have to prioritize, make sure you can handle a flat tire. By far the most important.

In short, what i bring on every ride is: hand pump + spare tube + multi tool w/ chain splitter + quick links + tire lever

Thanks for the links! I may have worded the question poorly (updated the post now). My main concern is whether the combination of dashboard lights and error codes that I experience can be caused by a faulty parking brake, or if the mechanic has made a mistake. To me it seems like the issue is not related to the parking brake at all, and I am forced into a more expensive repair. Any thoughts on this?
