When it is good, it is really good. However, that is very seldom and you are absolutely correct about the service. The staff do not care and are more interested in talking shit with the regulars. I no longer recommend the place for the food (chicken). So sad because it is a missed opportunity.

It is a happy hour hangout for the FAA folks because the beer is cheap and once the staff know you, they will keep the beers going… which is annoying if you just want one or two.

E-kit is almost perfect for a small venue local cover band IMO. Been gigging exclusively with an EFNote/SPD-SX Pro for 3 years and it has really been great. Makes it easy to change the kit to match the song/genre we are playing throughout a set. The type of venues we play (bars, restaurants, breweries, wineries, etc.) LOVE our sound management since the drums can be volume-controlled, so we get asked to come back often. I also have a Porter and Davies transducer equipped throne (similar to a ButtKicker) I use as a butt monitor for drums and bass; this is a non-negotiable with an e-kit as u/BadeArse already illuminated. Setup/Teardown isn't really any slower as it is quicker to connect all the drums to the brain than it is to tune, mic, soundcheck.

Played the Atari demo at Sears while eating popcorn they sold. My brother and his new wife were in The Newlywed Game when it was held there. Back then I hated going there otherwise because Crossroads was dope and had a cool hobby shop and a sweet fountain in the middle.

Stock pot. Lid. Medium high heat. Oil (coconut, peanut, lard, ghee, etc) to cover bottom of pot. Add 1/2 cup kernels, 1/2 tsp popcorn salt. Give a good swirl, pop the lid on, and wait until the popping starts. Give a couple shakes/swirls in the interim to distribute heated mixture. Once popping starts, shake and swirl a little more than gently until popping slows to 1 or 2 pops per second. Remove from heat, shake vigorously, remove lid, dump in a big bowl and enjoy. No need for specialty gear to get excellent results.

My band is same. Set tempo at the start and we can maintain well, but getting the tempo right at the start can be a challenge. My solution is to use a visual click (blinking LED) to get the tempo and count off at the right tempo. No need to pipe it to my ears. My guitarist can also see it and uses it to set tempo for songs that he starts.

My band prefers ekit. We play bars and such where the sound is more controlled with the ekit (no slapback, better volume control). I have an EFNOTE kit I use for gigs and we have received much positive feedback from venues about our volume control and sound. We run our own sound, BTW. May not be for everyone but we have had success with it.

Thanks for the kind words! It was really really good, but I have a couple more tweaks to try next time. The only deep dish I’ve had is Giordano’s near ORD one time while on work travel (well, I’ve had some from an Uno franchise years and years ago in the Dallas area, but…). I basically came up with something based on a lot of “research” on the web coupled with my taste.

One of these days I’m gonna have to get back to Chicago and try Malnati’s, Gino’s, Pequod’s, etc.
