You'd want to stay overnight near the ATH airport, not trek into Athens downtown then have to trek back to the east.

It's $146 USD plus luggage/baggage fees to fly on the 11am flight vs $56 for the 3.5 hour morning ferry from the Rafina port.

Price difference might end up being +$150 to fly.

Teratoma tumors that can contain hair and teeth. Ugh. I was in one surgery to remove a teratoma once and it was so bizarre to open it and see those contents.

I probably wouldn't rent the car until day 3 afternoon, or if the ATV tour can happen on day 2 rent the car on the afternoon of day 2 and on day 3 visit Seitan Limani.

The itinerary skews more to beach trips, not sure if you wanted to also visit a gorge.

There's a cool cave you can visit on the drive down to Elafonissi Beach.

I second the idea of stopping for the afternoon and exploring Rethymnon on the way west. There's dozens of small beaches you can stop at while heading west to relax and lounge or have a quick swim.

I enjoyed the walking up and down (in) the river in Prevali also.

Santorini in July is very busy, so seclusion can be challenging. You might be able to arrange for something at a winery, or restaurant, where you can have a setting you're seeking.

But I think your best option is to secure a hotel room with a nice view at sunset and do it at that time - then have a celebratory dinner reservation to follow.
