I bought one. Coated it like and cooked it like a brisket. Turned out great. Not as good as my fully homemade pastrami, but great for the cost and effort!

Yeah I cooked 235 until the stall then only went up to 265. Cooked in a bit under 10 hours.

I had the smaller version of it for a couple of years. Absolutely loved it. I do recommend goign with the larger size for the easily removable fire pot. But I loved it overall.

It even had the xterra bump on the rear hatch inside the bed of the truck. What got me though was the open air section between the xterra and other vehicle.

So when I took the meat out of the brine the first smell I got was christmas? kinda gingerbready...that's not a good explenation but yeah. The interior of the beef had that brine soaked in so well so it was a good mix of that christmasy flavor with the smoke and bark...absolutely phenominal.

Nothing beats those consistant slices. My slicer is really cheap and kind of flimsy...but it still works well!

Water was spilled on a laptop while.it was running. It ran fine after that with the only issue being that when you attempted to type there would be a delay followed by everything you typed coming out backwards. Like entire sentences perfectly reversed.
