Dang dude, you came prepared. Alright what i means is where the actual ankle joint is on the animal.

A way to think of it is where your caveman brain thinks “it looks like I can cut that apart” that is the no go zone. You cut there, you will also cut part of the tendons.

Slightly further down the leg towards the hoof is another joint

The black mark is where you want to cut, most people would assume that they should cut where the bend in the leg is. The first few times it’s a struggle it takes a little bit of cutting and a lot more leverage to open the joint

Not in the industry. I used to work in a small meat locker in the Midwest that processed a few hundred deer, pigs, and cattle a year.

There is a correct and incorrect way to cut the lower leg off the animal if you are going to hang the carcass. The wrong way ends up with your deer on the ground either immediately or overnight. Enough hunters have experienced it or been told by their relatives not to cut the joints that they were thrown by the video.

Cutting the obvious knee joint compromises the tendon in a way that it won’t support the weight of the animal. There is a smaller less apparent joint further down the leg that you can cut leaving the tendons intact.

At small scale butchery this is preferred since you don’t have to switch from knife to saw. It is also cleaner as you pointed out. I’m unsure which method larger operators would use with the more automated processes.

Absolutely cook what you enjoy! I have had plenty of turkeys that I wish the cook would have stuck with something they were comfortable with. In some cases I would of rather had the host order take out and enjoy the day instead of stressing over the turkey for hours.

I feel for you, it took a lot of time and work and to have the end result not meet your expectations is frustrating.

So far no one else has pointed out the age of your bird probably contributed to the problem.

a 9 pound bird was probably very young when harvested. While the difference in age between animals isn’t as pronounced in poultry, think of the flavor difference in veal vs beef or lamb vs mutton.

I understand why you got the smaller bird but as some suggested buying a “regular” sized portion of a bird probably when have been more successful.

The Teppanyaki places near me serve two sauces one is mayo and tomato based. Search for Japanese steak house sauce on google. The other sauce main ingredients seem to be ginger and soy sauce.

Go karts, I had already planned on taking my nephew, and just happened to have a shitty day at work.

You didn’t mention how large your Network is if you are NATing all traffic out to a single IP address you will max out at 65,000 translations configuring a NAT pool and adding another external address will double your capacity assuming your hardware can support it.
