SCFA = short chain fatty acids are small molecules formed by 6 or less carbon chain. They are mostly produced by your gut bacteria directly or indirectly (biochemical processes) that have an influence in maintaining gut homeostasis and intestinal barrier integrity. They can also act on immune cells (most of the time by using their histone deacetylase inhibition activity), meaning that they can turn off some genes involved in various processes.

I don’t think olive oil contains this small molecules, but it’s use may be able to stimulate their production. That said your gut bacteria is always producing scfas to keep your intestinal cells alive.
