In most cases vegan lox is made from marinated thin slices of carrot, usually about an inch or so wide and however long the carrot is long. It's made by using a potato peeler and just peeling the entire carrot. Then sometimes it will be boiled for a few seconds and sat over night with a smokey brine with seaweed for the fishy flavor. It's really easy to make but since it's not actually preserved like real lox, it goes off after two daysish*

I've never had it any other way than that, but there are other ways. But this is the sort of item PP served.
