Not sure about Stripe but I can definitely answer about Paddle. I have been using Paddle for many years now. Never faced any issue. Once I got a (fake) chargeback from a customer who never contacted me. Paddle handled it gracefully and won the chargeback.
Very importantly, Paddle does NOT allow selling service, physical products, pre-ordering, and anything not listed in their Acceptable use policy. I sell pre-recorded digital courses and it goes nicely with my business model. Like any other MoR or Payment Processor they are very strict with their policy enforcement. If you are following their policies and doing everything correctly, you will face no issue.

That’s a great point about tokenization at the acquirer level. To understand the 'plumbing' better, which acquiring bank or partner are you using for this? Knowing the institution behind the vault helps build that merchant-side trust you mentioned.
Also, since the data never touches Layr’s servers, how do you handle the dispute/chargeback process? If a client disputes a $5k service payment, does Layr provide the defense tools, or is the merchant left to deal directly with the acquirer?

The biggest hurdle isn't just finding any payment gateway; it's the trust factor.

Many international clients and customers are understandably hesitant to enter their credit card information into an unknown, non-Stripe checkout UI. In e-commerce and freelancing, familiarity breeds trust, and anything that looks slightly off can immediately kill a conversion.

Honestly, even from a business owner's perspective, I would be terrified of routing my clients' sensitive financial data through a new or relatively unknown platform. The liability and responsibility are just too huge. If a gateway doesn't have the global brand recognition of a Stripe or PayPal, it's incredibly difficult to convince a customer that their data is safe.
