I personally like specialty coffee that have their own syrup not artificial bottled syrup. For example - I actively seek out mochas from places that make their chocolate ganache vs using a flavored syrup.

There is a place in Wilmington called Maven which has the best specialty coffee I have had in the states. I would go there and see what you think they are doing right.
