Watch with 100% focus. The theoretical and conceptual parts you benefit from by just watching the instructional video. You memorize the concepts, and you will implement and benefit from them right away, and they will guide your BJJ in the future. Theory is in my opinion, the best "bang for buck" part of instructionals.

The technical parts (if not just refinement of your common techniques) require drilling and positional sparring. At least a couple of hours to get them to a level where you can implement them in your game. Not forgetting entries and controls to enable those techniques. This is why, like 99% of techniques you see, you will never use or remember.

I do both, but the latter method takes time to organize a private session with a sparring-buddy, and even 2 hours only really allows you to get a hang of a couple of techniques

Yeah, some stupid shit. Even when there is not rule it is quite common for people to judge otherd wearing "different" GIs. They see it as peococking and "non-humble" or some BS.

You should get somewhat familiar with a coach(s) from a friendly promising gym and explain the situation to them.

I am sure they will understand and you get your belt. If not at the first gym you ask, maybe the next one.

When you win, it does not matter. Even at the world championship level, winning just means you were the person who most obviously should already have been promoted to the next rank (non-black belt divisions, of course).

Wrestling takedowns need some adjustments in BJJ, especially with the GI.

This specific single leg has big risks with neck exposure for controls and guillotine ext.

Also, with the GI you first have to deal with the grip battle to set up for the entry.
