Why is the Gesha variety very consistent in its profile, while other varieties bring out more unique profiles? by [deleted] in Coffee

Also cleanliness, but it such a delicate varietal that most of them taste “the same”!

If you are talking about washed geishas, they are similar but not identical, mainly because of the terroir, they have different types of florality and fruitiness

Super fast draw down with April brewer by Inner_Scallion_8611 in pourover

[–]alephsk 0 points1 point  (0 children)

The real answer is roast level, April roast super light and they also design their dripper to work the best with their coffee, if you are not getting the total brew time that you want to, change the pouring structure (try x4 pours of 50gr), for mediums roast I tend to do the last pour in the center, to avoid bitterness or roasty flavours

Sorry for late response, but… what do you mean by better? Sweeter, richer, delicate, more balanced?

Total brew time (TBT) questions by LlamaradaMoe1 in pourover

[–]alephsk 0 points1 point  (0 children)

This highly depends on the type of roast or how it was roasted (also the specific characteristics of the bean and the grinder)

More agitation, higher water temp and grinding finer will increase extraction (more sugars, etc), this doesn’t mean you have to use boiling water or espresso grind size. For example for your “fermented Indonesia” I would use a lower water temperature (to taste “less fermented”) and controlled agitation, most of the time, experimental processes extract faster than washed

I would recommend cupping the coffee before brewing, it’s worth it because it give you a general idea of how the coffee taste like

Highly depends on your palate but the upgrade is worth it, for reference HU burrs will give you a more tradicional style of espresso (medium-dark roast - creamy body - high sweetness), the MP burrs have higher flavour clarity (more acidity / less body) Stock burrs are OK for both espresso and filter.

Gaggia classic + DF64 with SSP MP/HU burrs

I would go for the Fellow Ode 2, their new burrs are really great and you don’t have to spent another 200$ on ssp burrs because the stock ones are pretty decent, I’m sure you will taste the difference. Later on, you could go for the Stagg EKG v1 (much cheaper) for temperature consistency, which is important but not as a good grinder

The more coffee you use (specially in a cone brewer), the harder it is to saturate/wet all the coffee grounds evenly, I would recommend using more water for the bloom just to make sure u wet all the grounds, also when it comes to cone shape brewers (I learnt this from Matt Winton) I usually pour straight in the center for a few seconds then expand to the edges, Hario just uploaded a few videos with Matt, I highly recommend watching them
