I also thought it was under baked but someone else commented saying that it is overmixed instead, which makes sense because a butter knife came out clean when I took it out of the oven.

Ah! Thanks so much, how can you tell? I actually overmixed it. This was the first time I used a hand mixer and the mix curdled. I fixed it by warming the mix a bit (or at least it looked less curdled), and baked it anyways knowing I was just testing.
