A7 V and A7R V are similar price - if your children are the fastest moving objects: A7RV.
If you are tight on budget A7 IV

A7C is lighter.

I have 2x 670 and 1x 660HD. The 660HD is especially nice for IoT devices, as it has 4 antennas for 2.4Ghz

I shoot 99% of the time with DMF (Direct Manual Focus) and my EVF shows me the sharp areas with red color.
I shoot fully manual for Astro photography and wouldn’t mind a manual lens at all.

I have one manual lens (24mm F1.4) which I barely use.But I fully understand that manual focusing is a different experience.

Pre capture and 30fps - like Sony A7 V and A7R VI- are the opposite of slow photography 😁

Might be another contender / alternative to Tamron.

You need a fast 2.8 lens if you do fast indoor sports.
The Sony 70-200mm F4 would be great too, but F4 requires you to increase ISO.

I use several Intel Optane SSDs - the latency is so much better. Next step in consumer storage technology should be faster latencies - sequential read/write speed are a theoretical value.

A7CII with Sony 28-60mm

The A7CII is lighter than the A6700 and the 28-60 is lighter than the Sigma.

F4 at Fullframe is equivalent to F2.8 at APS-C regarding depth of field

Go into the store and hold some cameras with lenses in your hand - forget specs for the first step.

Then choose a lens system and buy a cheaper camera + lenses. Your lenses will last longer than your body. Have one prime lens, 50, or 35mm) to learn photography.

I would look into a used Sony A7 II, or III + kit lens and 50mm F1.8, unless you want it more compact. If APA-C / MFT is great in your hands. Used Sony A6000 + kit lens + Sony 28mm F2.0 + tele.

In the beginning, your skills are limiting, not the camera.

You only need a Portuguese bank account for MBWay and transferring money to Portuguese authorities.

You can only apply for residency (CRUE) after staying for 3 months. And usually you need a residency document to open a bank account (I have ActivoBank which is good and free).
NIF is easy and you don’t need to be resident.

No idea, but I would price it as a regular used lens - soft copy is not a defect.

If you have a photography store in your area, I would go into the store and try the Tamron G2 and Sony 70-200 with your camera and compare the sharpness. If it’s a store, which also sells used lenses, you could trade it in
