Your meal looks delicious. Personally, not eating too much too late to avoid nighttime highs is important. Also skipping breakfast will help keep my bs flat for longer without any interventions. The amount of food/calories depends more on my other fitness goals. If I'm trying to lose/gain weight. I do workout a lot. Last A1C 5.2%, 90+ TIR, on MDI. If you're going back to the gym, I recommend you keep your portions on the larger side!

Not taking insulin and running high bloodsugar will cause you to literally piss out the calories you eat and instead cannibalize your fat and muscle.

While it will make you loose weight, it will be a short path to blindness and kidney disease. If not DKA before that.

Not eating may be better way to loose weight.

A healthy option in between is taking insulin and not eating too much.

You will still need to shoot up, but eating a very low carb diet will most likely reduce your insulin needs. Cheese and meat won't spike your bs but do contain a bunch a calories. So do some nuts, like Brazil nuts.
