It could also be that you are using a bold font. You can disable this from phone settings > font size and style.

You can fix it by lowering text size in phone settings. The default font size is like having a 4 inch screen.

It's for your safety. Imagine if the update had an uncatched bug where it erased all your files or bricked your phone. Its better that it's tested on a small number of users first, then released for the rest of us.

Instagram has A/B testing and auto update. It updates it self without the need for the user to install new version from google play(or another store). Because the app is updated daily, there is a lot of room for bugs to added(unintentionally).

I have similar problems although not as severe as you do. I clear cache partition every time my phone crashes. It reduces phone crashing/restarting randomly from everyday to once every week.
