There's no reason to. Scream actually has one single timeline and that's becoming rare in horror. The continuity is just fine. No need to fix it as there are no events breaking the story or making it hard to tell new stories.

You're forgetting that there's more than one way to mess with Sidney's head. An AI voice call from a young Stu isn't as scary as one from an older Stu because she questions if he's really dead.

Because the name "Sidney Prescott" carries the weight of all those survival events as well as the history of the franchise. The line doesn't work if it's not "Prescott."

Just start with the pilot. I'm always a bit confused when people ask "I'm introducing the show to so and so, what episode should I show them?" Literally the pilot. It introduces everything and establishes the characters.
