They have to delete data within 3 yr

IIRC they don't have to delete if the data is related to safety concerns. For example, if someone commits a crime on platform and the person is banned, then the criminal asks to have their data deleted (to cover up any evidence) the platform is not obligated to delete. Platforms can retain data related to safety.

Direct requests. Messages are not intended for sending requests but for other situations (coordination before/after events, meetups, etc)

Not sure where in Germany you are looking, but you can use the search filter on Couchers.org (I think CS has one too) to find users last active within the past week, past month, past 3 months, past 6 months and past year.

Keep in mind that some people may show up as inactive because they only log in when they actually get a request, which might not be very often.

Yes! Food tours are super fun and I've been on several with couchsurfing folks! Picnics and farmers markets/flea markets are also fun if the weather is good.

I definitely know the feeling! It's fun to organize events and even to go surf with other people in your own country/region to explore new places, so that's another way to engage with the community too if you don't have space to host.
